Celery Salad with Dates and Walnuts – Better Than it Sounds
Celery doesn’t always get the attention it deserves — which is a shame because it is wonderfully healthy and endlessly versatile. This salad changes that. Inspired by a recipe I came across, I couldn’t help adding a little more — sweet dates, toasted walnuts, and Parmesan bringing it all together into something that genuinely surprises.
Celery Salad with Dates and Walnuts

1 bunch of celery, cleaned and chopped in small pieces
3 large shallots (chopped finely)
juice of 1 large lemon (or 2 small ones)
4 Tablespoons of extra virgin olive oil
Stone 20 dates and chop into small pieces
60 grams walnuts
1 cup of grated Parmesan
Directions
- Roast 60 gr of walnuts in a preheated oven at 160°C for 6 minutes, then roughly chop.
- Mix shallots, lemon juice and oil together. Add celery and leave to sit for 5 minutes.
- Add the dates, walnuts and three quarters of the Parmesan and toss together.
- Garnish with the remaining Parmesan.
Notes
- For a richer variation, substitute the Parmesan for gorgonzola. The creamy saltiness pairs beautifully with the sweet dates.
